Pasta with Walnut Pesto

serves 4
12 oz pasta
1/2 cup walnuts or almonds
3 T. olive oil
1 large onion chopped
salt and pepper
1 lemon
1 clove garlic
1/4 cup grated parmesan
1 and 1/4 cups frozen peas or broccoli (thawed)
1/2 cup white wine

heat oven to 400. cook pasta according to package.

spread walnuts on baking sheet and bake until fragrant, usually 6 minutes. transfer to blender and cool.

heat 1 T. oil in skillet over medium heat. saute onion with salt and pepper. Saute 6-8 minutes.

Remove 3 strips of lemon zest from lemon. cut fine and add to blender along with garlic. pulse till fine. add parmesan, 1/4 peas, 2 T. oil and salt and pepper. puree till smooth.

Add wine to onions. let simmer for 2 minutes. add 1 cup peas to pan and cook till heated. Toss pasta with walnut pesto. add some of the pasta's cooking water if mix is too dry. add onion mix. toss to combine. add a squeeze of lemon juice before serving.
