Quinoa and Mushroom Skillet

1 tablespoon olive oil
1/2 medium red onion, thinly sliced
1 cup uncooked quinoa
2 cups vegetable stock
10 to 12 oz cremini or baby bella mushrooms
salt and pepper to taste

1. Heat oil in large skillet over medium heat. Add onion, cook stirring often, until golden. about 5 minutes.

2. Stir in quinoa and cook, stirring often, 1 to 2 minutes or until quinoa is toasted. Pour in stock.

3. Stir in mushrooms. Cover and cook for 15 minutes or until stock is absorbed. Season with salt and pepper to taste.
